Why a protein bar lists three different sweeteners

Pick up two bars with similar nutrition panels and you will often find one lists a sweetener second, and the other lists three sweeteners at positions four, six and nine. The second bar can easily contain more total sweetener than the first.

Nothing here is a violation. It is a predictable consequence of how the format works.

The rule creates the incentive

Ingredients are listed in descending order by weight. There is no requirement to group functionally similar ingredients, and no requirement to disclose percentages.

So a formulation using one sweetener at 12% lists it high. A formulation using three sweeteners at 5%, 4% and 3% — 12% in total — lists all three lower, and the first thing your eye lands on is something else entirely.

What the splits usually look like

The common patterns are worth recognising:

  • Syrups plus alcohols. Brown rice syrup or tapioca syrup providing bulk and binding, with maltitol or erythritol providing sweetness without the sugar declaration.
  • High-intensity plus bulk. A tiny amount of sucralose, stevia or monk fruit does the sweetening; a sugar alcohol does the volume and mouthfeel. The high-intensity sweetener appears near the bottom of the list because it is used in milligrams.
  • Several syrups. Two or three different syrups, each individually modest.

This is not the same as the ingredient being bad

Worth saying plainly, because the observation gets stretched. A split list is a labelling artefact, not evidence that anything in the bar is harmful. Most of these ingredients are well characterised and approved at the levels used.

What the split does is defeat the shortcut. "Sugar is not in the first three ingredients" stops being a useful heuristic the moment sweetening is spread across five entries.

The panel is the better check

The nutrition panel does not have this problem. Total sugars and added sugars are aggregated regardless of how many lines the ingredient list uses, and sugar alcohols are declared separately where present.

Read the panel for quantity. Read the ingredient list for identity — what the sweeteners actually are, which is what determines tolerance and glycaemic response. The two answer different questions and neither substitutes for the other.
