Yogurt likely arose from accidental fermentation of milk in animal skins along ancient trade routes. Modern commercial yogurt became standardized in the early 1900s in Europe. Today, dried forms are produced by fermenting milk with Streptococcus thermophilus and Lactobacillus delbrueckii ssp. bulgaricus (and sometimes adjunct cultures), then concentrating and spray-drying to make a shelf-stable powder.

The key digestive issue is lactose. Many people with lactose intolerance tolerate around 12 grams of lactose when eaten with other foods, but symptoms often appear at higher single-meal intakes, and tolerance varies widely. Because yogurt powder is lactose-dense by weight, pay attention to serving size, especially in concentrated mixes or coatings. Products that truly retain live cultures may be better tolerated by some, but most powders do not contain viable cultures after drying.
Limit Consumption
People with lactose intolerance should monitor portion size and consider whether the product contains live cultures, which can improve lactose digestion. Individuals with irritable bowel syndrome (IBS) may be more sensitive to lactose and should test tolerance cautiously. Those with galactosemia must avoid dairy lactose entirely. Yogurt powder is not a substitute for infant formula and is not appropriate as a primary milk source for infants.
