Okara—the fibrous pulp left after making soymilk or tofu—has been part of East Asian food traditions for centuries. Industrial soy processing created large streams of okara and soybean hulls; by the late 20th century researchers learned to isolate ‘soybean polysaccharides’ and ‘soybean hemicellulose’ from these byproducts, precipitating them with ethanol and spray-drying into stable powders now used worldwide as fiber and stabilizers.

Expect changes in bowel habits as intake rises: more frequent and softer stools are common at higher doses. Trials using about 21–60 g/day reported increases in stool mass and frequency, with some gas or bloating. Many people tolerate smaller amounts well; consider starting around 3–10 g/day and increasing gradually with fluids. People with IBS or sensitive digestion may need a slower ramp and may prefer smaller, divided doses.
Limit Consumption
People with sensitive gastrointestinal conditions (e.g., IBS) may react to rapid fiber increases; gradual changes are advised. Older adults with slow transit may benefit from the laxation effect but should still increase intake slowly. Use in infant and specialty foods follows product‑specific regulations; rely on the product’s directions and your clinician’s guidance.
