Lycopene is the pigment that makes ripe tomatoes red. Industrial use as a colorant expanded after solvent-extraction of tomato oleoresin became feasible in the late 20th century; today lycopene is sourced from tomatoes, produced by fermenting the fungus Blakeslea trispora, or synthesized, with all three routes used globally under food-additive approvals.

Lycopene colors are refined extracts, often made with ethyl acetate and further purified; while residues are regulated, this is a highly processed ingredient rather than whole tomato. The EU’s ADI is 0.5 mg/kg body weight per day, so heavy cumulative intake from multiple colored products plus a supplement can exceed this conservative benchmark. JECFA allows lycopene from tomato, fungal fermentation, and synthetic sources when used as a color, reflecting low toxicity across sources. For most consumers at normal food-use levels, risk appears low; caution mainly applies to high-dose supplement use or stacking many lycopene-fortified items.
Potential Benefits
Lycopene acts as an antioxidant that can neutralize reactive oxygen species. Meta‑analysis shows small reductions in oxidative‑stress markers like malondialdehyde (MDA), but little to no effect on blood pressure or lipid profiles. It is not a source of vitamin A. In foods, its main role is coloring; any health effect at the tiny amounts used as a color is likely modest. Benefits are best viewed as supportive of balanced diets rather than a stand‑alone fix.
Digestive Effects
Human studies suggest supplements around 30–75 mg/day are generally tolerated, but some people develop mild nausea, soft stools, or diarrhea at the higher end. An “observed safe level” near 75 mg/day has been proposed, yet individuals vary in sensitivity. Typical intakes from colored foods are much lower than supplement doses, making digestive effects unlikely for most people. Those with sensitive GI tracts may notice symptoms sooner and may prefer to avoid high-dose supplements.
Limit Consumption
EFSA’s exposure assessments and category limits explicitly consider infants and children for lycopene as a color. When used within authorized levels, safety bodies judge it acceptable across age groups. People who already consume many lycopene-fortified products should be mindful if adding a supplement, due to the EU ADI. If you have a medical condition or take multiple supplements, discuss new high-dose lycopene supplements with a clinician, as disease‑endpoint benefits are uncertain.
