For centuries, peoples such as the Shipibo-Conibo and others pressed the clear juice of unripe fruit; on skin it oxidizes to a deep blue-black dye. The ripe fruit (genipap) appears in regional drinks like Dominican ‘guarapo de jagua’ and Brazilian jenipapo liqueur, while modern food science harnesses its iridoid genipin to make a stable blue food color by reacting with amino acids like glycine.

At typical color-use levels, digestive effects have not been reported. The amounts used are tiny and contribute negligible calories, sugars, or fermentable carbs. People with sensitive stomachs do not appear to have specific issues related to this colorant at permitted levels.
