Using cultured celery powder still means the product contains nitrite, so the chronic risks linked to processed meats apply even when labels say 'uncured' or 'no nitrite added*'. Nitrite can react to form carcinogenic N-nitrosamines, particularly at high temperatures and in some processing conditions. Safety limits (ADIs) exist, yet frequent, large servings of cured meats can contribute meaningfully to your total nitrite/nitrate intake. Evidence to date does not show a health advantage of 'natural' nitrite over synthetic nitrite—both behave the same in the body.
