Cellulose is the structural fiber in nearly all plants. Food-grade cellulose was commercialized from wood pulp and cotton linters as paper and pulp technologies matured in the early 1900s. By the 1930s, regenerated cellulose casings helped make skinless sausages possible, and powdered cellulose later became a common anti-caking aid in shredded cheese and dry mixes in the U.S. organic rule history notes petitions and permissions through the 1990s–2000s.

Digestive Effects
As an insoluble fiber, cellulose primarily increases stool bulk. Studies report laxation benefits at roughly 14–38.5 g/day and general tolerance up to about 35 g/day. Some people may experience gas, bloating, or stool changes at high intakes. To improve tolerance, increase fiber gradually and drink enough water.
Limit Consumption
People with IBS or a sensitive gut may react to abrupt increases in insoluble fiber; go slowly and monitor symptoms. Children and older adults can be more sensitive to rapid fiber changes, so gradual introduction helps. EFSA’s re‑evaluation did not flag safety concerns at typical uses across age groups, including infants, when used as a food additive under current practices. For most healthy adults, small amounts in foods are unlikely to cause issues.
